A world-renowned craft beer school is making the move from Chicago to Montreal, marking a major shift in North American brewing education. The Siebel Institute of Technology, with a legacy spanning over 150 years, cited difficulties in attracting international students as the primary reason for the relocation. Stricter U.S. visa rules in recent years have complicated enrollment for many foreign students, who now make up a significant portion of its student body.

Starting in January, the school will operate in Montreal’s Hochelaga district, close to the original Molson brewery. Founded in 1868 as the Zymotechnic Institute, Siebel initially offered short programs for brewers, bottlers, and engineers. Today, it provides in-person and online courses for aspiring brewers worldwide, ranging from five-day workshops to 20-week intensive programs. The school also partners with international institutions, combining modern brewing techniques with traditional methods.
